컨디션은 넘나 평소와 다를바 없어서 놀라울 뿐입니다.

솔직히 감량 때문에 시작한 단식은 아니었는데 체중은 많이 줄고 있습니다. 
거의 수분이 많이 빠져나가는 것 같아요.

단식해도 아무렇지도 않은 몸을 보면서 그래도 2년동안 저탄고지 하면서 몸 회복 하나는 확실하게 시켜놨구나,
나 그동안 정말 잘 먹고 잘 지냈구나 하는 뿌듯함이 몰려옵니다.

역시 몸이 회복되면 빼는 것은 쉬워지나봐요.

몸이 회복되는 과정에서 증량이 있을 수도 있지만 어차피 회복되고 나면 빠질 것들인 것 같습니다.

Preheat oven to 350 degrees and prepare muffin pan with paper muffin cups 2. Peel zucchini and shred. Measure out one cup. 3. Combine almond flour, baking soda, cinnamon, nutmeg, and salt in a large bowl. Whisk until blended completely. 4. In a separate bowl, combine eggs, honey, lemon juice, and almond milk. Looking back I could’ve passed on the opportunity on taking a risk of myself, I could’ve told myself that I didn’t have the money to start but I didn’t. I knew I had to make a change because I was drowning. I was drowning so bad I laid in bed at night crying because I didn’t know how I was going to make ends meet and get out of debt. I kept watching @christinabrillpull herself out of debt and able to spoil herself and others. I wanted that, I wanted what she had and I knew there was only one way to get it. Take a risk on myself, and I couldn’t be happier that I did.

Bone broth done! Didn& #039;t really have a lot of meaty knuckle bones so I used a bunch of GF beef marrow bones I had in freezer and a handful of chicken feet from my own pastured birds. The feet provide the gelatin/collagen, the bones provide the minerals, the marrow is just bonus super healthy! Be sure to add a good amount of sea salt AND red wine or vinegar to help break everything down and to leach the minerals from the bone! Swipe to see what a healthy chicken looks like. When buying a pastured free run chicken see that it has yellow/orange fat (just like good eggs) indicating it has been eating plenty of grass and plants! The fat should not be pink/pale/white. Keto. Carnivor. Paleo. Heal the gut!

I admit, I woke up this morning feeling strange. I didn’t feel as stoked to go to the gym, I was tired, and my workout was not as good as it usually is. Can you believe I used to do hours of cardio? I became OBSESSED with the amount of steps I would take every single day; it practically consumed my life. Instead of having lunch with coworkers, I would go for an hour walk in the blistering heat and humidity, coming back sweating. Instead of hanging out with friends, I would go to the gym because I didn’t hit my minimum steps that day. Instead of being free, I was a slave to the gym and exercising. Some days, I would run for an hour, and then proceed to walk for another hour... And that was just my morning workout. I’m telling you all this because I was walking this morning and thought to myself that I can’t even fathom spending 2 hours on the treadmill at once. Heck, even 15 minutes goes by pretty slowly now 😂 What I came to love about strength training is that there is always progress that can be made, and it’s so exciting and liberating to see the goals you’re going after be accomplished, instead of running endlessly into the abyss. I’m a creature of progress and personal development, so I know that this is DEFINITELY for me 💪🏻😊 •••••••••••••••••••••••••••••••••••••••••••••••••

This transformation makes me super emotional. There is about a year’s difference between these two pics. The picture on the left was the summer after my freshman year, when I was recovering from a relapse and had to abandon my plans for an internship in Toronto to stay home, try to recover again, and get therapy. I really thought I was getting better, then. The right was from a couple weeks ago, when I decided to stop my exercise addiction of running and hours of cardio and obsessively counting steps in favor of strength training. I took this picture because I was really proud of my booty gains even in merely a couple of weeks. I was, and am, making an effort to eat more, love myself, listen to my body after almost four years of a miserable life in the midst of anorexia and exercise addiction. This summer I got out of my comfort zone, traveling across the country for an internship, going on spontaneous trips, eating unplanned meals, but spending time with people and feeling free. I’m admittedly still a huge work in progress, but as I’m on the plane right now going back home, I scrolled through my camera roll and was shocked to see the contrast in merely a year. I was so hopeless last year and thought I’d be in this vicious cycle of starvation for the rest of my life, but this picture gives me hope. Normally I’m unable to notice how much progress I’m making because I’m the one in the middle of it, but I’m so thankful for these little reminders that I’m making strides towards a better life 💫💕 •••••••••••••••••••••••••••••••••••••••••••••••••

Today is actually going by pretty quickly, which is good because I’m going home this week and I want to leave DC already 😅 I’m kind of anxious because since this week is my last week here during my internship, I’m eating out more than usual or breaking up my normal routine, which is less “healthy” than I want it to be. But then I remind myself: it’s only a few days. Do I eat like this every other day? No. Will my body change significantly? No. Should I restrict to “balance out” what I’ll be eating? Uh, heck no. HOLY MOLY I just finished leg day on #CrushItWithCoCo and this sweat was AFTER my workout so this picture doesn’t even properly show how sweaty I was DURING my workout 😜💦 #LegDay is my absolute FAVORITE because I’m killing it and feel the burn in all parts of my body. Plus I love feeling sore the next few days, call me weird 🤷🏻‍♀️ I want to briefly talk about progression. Two weeks ago, when I first started strength training, I couldn’t even finish this leg workout and was pushed to my limits. I even messaged @cocos_gymstaand asked her if it was even possible to do this workout 😂 But even a mere two weeks later, I come back to the gym and am able to do this WHOLE workout! It hasn’t been a long time, but I have noticed myself getting stronger and progressing in the gym, bit by bit! So be patient with yourself and understand that everyone starts somewhere 🤗 •••••••••••••••••••••••••••••••••••••••••••••••••

I had such a relaxing day today! All my roommates are out of town so I had my whole apartment to MYSELF 🤗 I slept in until 10 which is pretty gnarly because I usually rarely sleep in that late anymore! But it’s always my priority to give my body rest, especially because my week of #workout left me pretty exhausted, to be completely honest. It was to the point where my legs felt like jello and were telling me to stop moving 🏃🏻‍♀️ I love spending time with myself, and it is extra nice getting even my whole apartment just for me! I went to go see Ocean’s 8, which was the first time I saw a movie in the theaters alone, and it was actually super nice! I also visited a food market after and then went to #traderjoes and now am back home eating this delicious bowl! Cheers to my favorite ice cream brand, @eatenlightened!! 🍦 I indulged in their delicious #marshmallowpeanutbutter flavor last night and my belly was happy and I went to bed so satisfied 😍💖 The base is very reminiscent of a marshmallow, and it actually kind of has a fluffier texture while still being creamy! Kicking off Friday with a tall stack of Blueberry & Banana Flax Pancakes 🥞 Gluten free, paleo, dairy free, and no added sugar ✔️ Here’s what you’ll need to make: 2 whole eggs 1 cup almond flour 1 tbsp coconut flour 2 tbsp ground flax seed 1/4 tsp baking soda 1/4 tsp salt 1/2 tsp cinnamon 1/2 a mashed banana 1/4 cup melted coconut oil 1/4 cup plain, unsweetened almond milk 1/2 a thinly sliced banana and 1/4 cup blueberries to press into batter . Beat the eggs with a handheld mixer until foamy. To the eggs, add the rest of the wet ingredients. In a separate small bowl, whisk together the dry ingredients and add slowly to the wet ingredients until a thick batter has formed. Cook on a greased pan/griddle on low-medium heat for 2-3 mins on each side. Press the blueberries and bananas into the batter before you flip the pancakes. Makes 8 medium pancakes!

Line a 20x20cm (8x8 inch) baking pan with parchment paper. Chop roughly the nuts and combine all dry ingredients in a large bowl. Add dates and 1/4 cup water to a medium pot on medium low heat. Once the dates are soft, process the content of the pot into a food processor until it forms a smooth paste. In a small bowl, combine date paste, almond butter and vanilla extract. Pour liquid over dry ingredients and stir until completely coated. Fold in the apricot chunks. Transfer the mixture in the prepared pan and press down firmly. Bake for 20 minutes.
