Two-year-old Roen was baffled and in awe of her giant, life-like, vegan avocado birthday CAKE today. Yes, that’s a cake!!! Master cake artist Emily of @whenpigsflypastries did it again. Never thought she could out-do last year’s peach cake (swipe to see it) but she did. (It’s our tradition to order a giant cake version of her current favorite food on her b-day.) Em’s animal-free cakes are as delicious and moist as they are jaw-dropping. Truly the best cake I have ever had!!!! What to order next year? Head of broccoli? Pictured is my lunch from today, a salad made of butter lettuce, kale, green chard, red chard, baby spinach, tomato, cucumber, celery, carrot, & fresh cilantro with a dressing of olive oil & balsamic vinegar and a topping of fresh ground Himalayan pink salt and black peppercorns.
Today was a kind of rough day. At lunch time, I opened the fridge and instantly started crying because there were too many choices. My first instinct was to skip the meal - save the choosing as well as eating less. My eating disorder, depression, and anxiety were all throwing negative words at me. “Do you really need to eat? You’ve gained weight this year!” “You don’t deserve food.” “You have to pick the right thing or you may as well give up!”
Thankfully, I have rules for these situations. I’m not allowed to skip the meal. I have to open the fridge again and look for a pre-prepped salad. If that doesn’t exist, I have to look for leftovers I can put straight in the microwave. If that doesn’t exist, look for hard boiled eggs. Next option is cereal. Last option is oatmeal, which I literally always have on hand. But my point is that I wrote these rules on a very GOOD day so I could have structure for the BAD days. It’s not my only rule, but it’s the one that saved me today.
