  • S U M M E R - I S - C O M I N G 🌻

    Last year I reviewed @munchcupboard & #039 ;s vibrant and super handy ice-pop molds and I was not disappointed, in fact I think in was recommending them as stocking fillers!!! My recommendation still stands.
    These things have come in so handy throughout the year but even more so in the last couple of months so I thought I would share with you my current pop-mold hacks 👍

    I C E- I C E- B A B Y ❄❄ I have giant water jugs that I keep on the bench so that they are easily accessible to the kids on these hot days.... and these molds are the perfect size for giant ice sticks!!!! Also saves the hassle of rogue ice cubes doing their own thing when trying to get them out of the ice-trays 🤗

    H E A L T H Y - S H N A A A A C K S 🍓🍓 a few months ago we found out my son is lactose intolerant, which sucks!!! This means no milk no cheese no yoghurts(pretty much everything kids love) , yes there are sooo many alternative options but they are also very expensive. We have made an "edible garden" with raspberries and blueberries so this has come in super handy to make him ice-blocks! By blending 1 banana with a handful of berries and some Mellon water (not too much it& #039 ;s very strong, so add fresh water aswell ) and freezing the mixture in these molds, he is able to benefit from healthy iceblocks without the dairy and sugar! W I N N I N G 👌 also they are so soft that at 18 months old he can grip them easily and can& #039 ;t break them... even bigger win.

    I& #039 ;m a model of course, one of those Victoria& #039 ;s secret kind... except Krystines secret is influenced by sperm, child birth and pizza, with a dash of donuts and scones.
    It& #039 ;s hot, I& #039 ;ve been living in long pants and t-shirts for the sake of my community but today I thought fuck the lot of ya.

    So in return, here is an epic easy and tasty Greek Pasta Salad recipe for you! Perfect for summer bbq& #039 ;s and a great way to use all those tomatoes and cucumbers you& #039 ;ll surely be picking from your gardens soon!

    Ingredients

    500 grams dried pasta spirals

    1 cup chopped cherry tomatoes

    1 cup chopped cucumber

    1 cup sliced olives

    1/2 cup diced red onion

    1/2 cup crumbled feta

    Dressing

    1/2 cup olive oil

    1/4 cup red wine vinegar

    1 teaspoon sea salt

    1 teaspoon dried oregano

    1 teaspoon sugar

    2 cloves garlic (crushed)

    Cracked pepper to taste

    Instructions

    Cook the pasta according to package directions until al dente. Drain and allow to cool.

    Add pasta and all other salad ingredients to a large salad bowl. Make the dressing by adding all dressing ingredients to a jar and shaking well to combine and pour over the salad. Mix together well

    Refrigerate until ready to serve. Pasta salad will keep well in the fridge for 3-4 days

  • This should have been a post announcing our pregnancy and how excited we were to be gaining a new family member next year, but instead I& #039 ;m sharing our miscarriage story.
    I only knew I was pregnant for 3 weeks (I was about 7 weeks along) but that was plenty of time to plan. In my mind I had moved Sadie into the spare room and a big girl bed, I& #039 ;d thought about where we would put the second carseat, if we would need a double buggy and had revisited the names lists. 3 weeks was plenty of time to wonder if it would be a boy or another girl and to imagine what Sadie would be like as a big sister.
    But all of that planning came crashing down 3 weeks ago with the words "you& #039 ;re having a miscarriage" and now we are left wondering what would have been.

    The practical farm girl in me tells me that it happened for a very good reason and I am so acutely aware of how lucky we are to already have a beautiful healthy daughter but the mum in me is hurting.
    So I& #039 ;m sharing this for 2 reasons.
    1. If you have lost a baby at any stage of your journey, I see you. I feel your pain. And I& #039 ;m so sorry.
    2. So that our babies aren& #039 ;t forgotten. So that they& #039 ;re not just swept under the rug and never spoken about again. Because as much as this hurts, the thought of that happening is unbearable.

  • We went to Gourmet in the Gardens tonight for the first time as a very casual almost birthday celebration for me! I took no photos of the food because #toddlers but I did eat some pretty amazing Vietnamese from the @banhmicaphenz food truck which has got me thinking I might make some of these rice paper rolls this week! And if you& #039 ;re in or near Hamilton, you have to go along at some point this summer...it& #039 ;s an awesome place to go, especially with kids!

    INGREDIENTS 
    100 grams rice noodles vermicelli
    12 rice paper wrappers
    Chopped veges - peppers carrots, cucumber, etc
    Chopped fresh herbs mint & coriander
    Chicken/pork/prawns optional

    DIPPING SAUCES:

    Vietnamese dipping sauce (Nuoc Cham)
    2 TBSP fish sauce
    2 tsp rice wine vinegar
    Juice of 1/2 lime
    1 tsp sugar
    1 garlic clove finely chopped
    Optional: chilli flakes or a finely chopped chilli

    Sweet chilli dipping sauce
    2 TBSP fish sauce
    2 TBSP rice wine vinegar
    2 TBSP sweet chilli sauce

    INSTRUCTIONS 
    DIPPING SAUCES:
    For each dipping sauce, whisk all ingredients together.

    RICE PAPER ROLLS 
    Cook the noodles according to the packet directions. While doing this, prep the veges - chop them into matchstick size pieces.
    Chop the fresh herbs and mix them in with the noodles.

    TO ASSEMBLE THE ROLLS 
    Prepare the rolling surface - I like to make my rolls on a clean, damp tea towel as the paper can be delicate and they don& #039 ;t tend to stick to the tea towel.
    Prepare the wrapper - take a bowl large enough to fit a rice paper wrapper in, and fill it with lukewarm water. Take 1 rice paper wrapper and soak it in the water for about 30 seconds until it starts to feel soft. Remove from the water and place on the prepared tea towel or other flat surface e.g. a chopping board.
    Fill the wrapper - add noodles, veges and meat (if using) to the bottom third of the wrapper.
    Roll it - just like a burrito - fold the bottom over the fillings, fold in the sides and then roll it up tight
    Repeat with remaining rice paper wrappers.
    Serve with dipping sauces. Any leftover rolls, store in the fridge for a couple of days, but they are best eaten that day.

Nothing could have prepared me for how I feel right now - clear headed, extremely happy and standing in my own power - 18 days since I last had a drop of alcohol - 2.5kgs down too 😆 I have had countless messages of both support and also many messages from people concerned about themselves or their partners drinking. Why did I share this deeply personal side of my life you may ask? Well I felt pretty alone and a bit desperate at times - if I can help anyone else feel a bit better about themselves/their situation I will do so, even if that means being ‘judged’ so be it (my care factor about that is pretty much zero 💁🏻‍♀️) I feel like I have control of my life back - which is empowering and great for the soul 🙌🏻 #onsundaysweswim #sober #zerofucks #iknowineedtotoneup #butikindadontcare 😆
