  • Did you know 🍄 are the only plant that contain vitamin D? They are also full of B Vitamins and selenium which is great for energy and immunity this time of year. I totally winged this soup but here’s a rough recipe below:

    Ingredients:
    * 1 portobello Mushroom Cap
    * 7ish Black Trumpet Mushrooms
    * 8 White Mushrooms
    * 1 shallot, chopped
    * 1 clove garlic, minsed * 1/2 tsp. fresh rosemary, chopped
    * 1 stem fresh thyme, chopped
    * Pinch of fresh sage * 1/4 cup coconut milk
    * 1 cup vegetable broth
    * 2 tbsp. olive oil * 1/2 tbsp. coconut aminos
    * Black Pepper
    * Sea Salt
    Directions:
    1. Add olive oil to sauce pot over low- medium heat then add garlic and shallots and sauté.
    2. Add herbs + few cracks of black pepper & sea salt and sauté
    3. Add mushrooms to pot and sauté for 8ish minutes, until they become very fragrant and water releases
    4. Next, add broth + coconut milk and bring to a boil. Turn heat down and simmer for 10ish minutes
    5. Add to blender and pulse (I like my soup a bit chunky) or you can use an immersion blender
    6. Season with Salt and Pepper and enjoy!

  • Happy Salmon Sunday friends! Keepin’ things extra simple tonight after having a near heart attack watching the Steelers game earlier 🙈 Luckily we were able to pull through and come out on top (barely) but needless to say I was not in the mood to cook something fancy after. Threw together this classic one-pan dinner, ft. baked salmon, broccoli, and extra crispy sweet potato wedges all topped with TJ’s everything bagel seasoning 😛 Now celebrating sweet victory with some pumpkin @halotopcreamery and calling it an early night over here ✌🏻

  • Homemade Gingerbread Paleo Granola.

    Ingredients:

    1 cup almonds
    1 cup pecans
    2/3 cup pepitas
    1/2 cup coconut flakes
    1 tsp cinnamon
    1/2 tsp ground ginger
    1/2 tsp salt
    Pinch of ground cloves
    1/3 cup maple syrup
    1/4 cup coconut oil
    2 tbsp molasses
    1 tsp vanilla extract

    Instructions:

    1. Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper. Add the almonds, pecans, and pepitas into a food processor and pulse to break the mixture into smaller pieces.

    2. In a large microwave-safe bowl, melt the maple syrup, coconut oil, molasses, & vanilla together for 45 seconds. Remove from the microwave, add in the nut mixture from the food processor, & stir gently. Add the cinnamon, ginger, salt, & cloves. Stir well to combine.

    3. Transfer the granola mixture to the lined baking sheet & spread it out in an even layer. Bake for 20-25 minutes until golden. Remove from the oven and let cool completely. Break into chunks & store in an airtight container or resealable bag for up to a week.

  • Looking for dinner inspo? Look no further than my all new Red Hot Baked Chicken & Cauliflower 🤤. Nicola @thewonkyspatula here with my final recipe of the week which is combination of some of my favourite things in life! Inspired by my every popular Scrumptious Spice Bowl 🌶 which I shared the other day!
    I debated over and over about what my last recipe should be, my sprout frittata, a good old veggie tray bake, chilli stuffed sweet potatoes… you name it, but I landed on this – it’s quick, it’s easy and it’s delicious exactly what you need when it comes to a @Whole30recipes 🙌

    I’ve had such an amazing week sharing some of my favourite recipes with you guys! Thank you @Whole30 for inviting me back! 💚 I hope you have all enjoyed it as much as I have, be sure to head over to my page @thewonkyspatula to keep up with the action and check out all of the other recipes which very nearly made it into this post!
    Ingredients:
    1 large head of cauliflower
    200g chicken breast
    150g spinach
    2 tsp coconut oil
    Large pinch of chipotle
    1 tsp paprika
    2 tsp cumin
    1/4 tsp garlic granules (you can use powder too!)
    2 tbsp ghee
    1/4 cup Frank’s red hot

    Method:
    1.Preheat your oven to 200°c/ 390°F.
    2.Separate the cauliflower into florets and add to a large bowl with the melted coconut oil, chipotle, paprika, cumin, garlic granules and a large pinch of coarse salt.
    3.Lay it out on a baking tray lined and bake in the oven for 20-25 minutes until they begin to go golden and crispy.
    4.In the meantime slice the chicken and add it to the bowl to gather and remaining spices/oil.
    5.Melt the ghee and add to the hot sauce.
    6.Toss the chicken in the hot sauce, remove the cauliflower from the oven and add the chicken to the tray, mixing thoroughly so that the everything is nicely coated.
    7.Cook for 10-12 minutes until the chicken is fully cooked.
    8.Remove from the oven and mix in the spinach. Once the spinach has wilted nicely, serve and enjoy!

  • Ending the weekend on a fry note isn’t a bad way 🍟 I haven’t made sweet potato fries in the longest time and man have I really missed them!! Here’s how I do mine: -
    -
    1) bake on 430 degrees for 45 min (bc extra crispy)
    2) Himalayan salt
    3) avocado oil🥑
    4) cover with everything but the bagel

So I took on the challenge with this hot chocolate recipe (:

  • Sweet potatoes really need no adornment, do they? None of our fussing and doctoring and recipes. They’re one of the most nourishing, grounding, satisfying, healing, sustainable, nutritive foods on earth. And on top of all that they are absolutely delicious. These are Hannah sweet potatoes, sliced into circles and baked on parchment paper. That’s it. I’ve been so grateful for these simple foods lately. They’ve kept me going, kept me grounded and sustained me through some difficult days. When’s the last time you ate something without adding a single other thing to it?

  • I was gifted this cute little oil diffuser awhile ago and just never got around to setting it up (because it’s sooo hard to do, lol 🤷🏼‍♀️). Today my car brakes stopped working properly so I have been forced to slow down and enjoy the calm. Physical activity, consistency, and routine all have done wonders for my overall well being, but I often forget that my mental health requires its own separate activities as well. Today I took my time and did some actual reflecting. I tend to do things in one extreme or the other. Either super motivated or extremely unmotivated. Either doing really fucking great for myself or feeling like I really fucked up this time. Either super focused or wayyyy unfocused. But I have to actively work to remind myself that an in between stage does exist. I can live healthily in between all of these things and it doesn’t need to be one or the other. I don’t need to either succeed or fail - because honestly, thinking that way is bullshit. I love the days when I feel super on top of my game, but on the days I don’t it’s okay. As long as I keep moving and keep progressing, that’s really all that matters.     Many different terms are used to describe eggs but there is a difference in pasture raised vs organic free-range.
    We always prefer our eggs pasture raised as the hens are in a natural habitat for the day allowing them to roam and feed on grass. The result delivers an egg yolk that appears more orange thus containing higher levels of vitamin A and E as well as Omega-3’s.
